This is such a yummy alternative to the classic, great for parties, or as a side dish!
13 small potatoes (makes 26)
2 celery stocks (diced)
2 tbsp relish
1/2 Cup Vegan Mayonnaise (or to taste)
3 Tbsp Yellow Mustard
Salt and Pepper to taste
1/2 tsp Paprika
☾ Wash potatoes, you can cook as is or halve them first.
☾ let potatoes cool and using a melon baller or a spoon dig most of the inside out leaving a thin shell (it'll be your preference how thick since the shell will be unflavored potato).
☾ In a bowl, combine the seasoning and add the mashed potatoes and relish & celery mixing it all in
☾ Add filling back into potatoes, garnish with more paprika and chives
☾ serve warm, room temperature, or cold!
